Kohlrabi is great to eat just peeled and sliced. But if you’re looking for something a bit different, this Kohlrabi bulb and Apple salad below is very tasty and has a nice crisp texture.
Kohlrabi and Apple salad
1 pound of Kohlrabi bulb (peeled and cut into sticks) 2 apples (peeled and cut into sticks)
Whip lightly 1/4 cup of cream, and stir into it: 1 T of fresh lemon juice 1/2 T of Dijon mustard 1/2 tsp of sugar
Salt and pepper to taste Fresh mint, chopped
Stir dressing gently into the kohlrabi and apple.
