Gingery Greens

1 pound of kale,collard or other greens ( or a combination)
5 T olive oil
1 tsp minced garlic
2 tsp peeled and minced (or grated) fresh ginger
1 T soy sauce
1 tsp sesame oil

Steam greens in a covered pan until soft; drain, rinse in cool water, squeeze dry and chop.
Heat 2 tablespoons of olive oil in non stick pan, add garlic and cook 1 minute (do not brown). Add the greens and cook for about 3 minutes. Add ginger, cook for 1 minute and then add soy sauce and sesame oil and turn heat off.
